Love Those Leftovers

Utilize the following tips when you have leftover holiday ham hanging around the kitchen.

  • For kid-friendly semi-homemade entrees, add chopped ham to frozen or boxed macaroni and cheese or thinly slice and use as a topping for frozen cheese pizza along with canned pineapple. Tykes, tweens and teens will also love soft tacos made with ham instead of beef. To make them, sauté onions, garlic, and chopped bell pepper in a little olive oil; add sliced ham and warm through. Spoon mixture into warmed flour tortillas, top with shredded Monterey Jack, salsa, and sour cream, and serve warm.
  • Make a creamy cracker-topper or sinful sandwich filling by tossing cubed ham, a little mayo, softened cream cheese, and salt and pepper in the food processor. Pulse until smooth. Stir in a couple of teaspoons of pickle relish and a dash of grated onion.
  • A fully-loaded stuffed baked potato made with ham, cheese, and veggies is a fast-fix entrée that saves on time and money.
  • Cube and freeze ham for later use in soups, salads, stratas, pasta bakes, rice dishes, and baked beans.
  • Break out leftover ham for delicious breakfast dishes! Slice and save for make-at-home egg mcmuffins, Western omelets, easy eggs Benedict (look for Hollandaise sauce mixes on the spices aisle), or breakfast casseroles.
